I never thought that I would learn a lot ( i mean a looooooooooooottttt!!! REALLY) from this cooking class. From Pasta making, sauce, which utensils to use, Dos and Donts in kitchen, choosing the right ingredients, cooking techniques.. (even Chemistry - formula and mathematics, and History - names of Italian foods, from which region did it come from..)etc.. I would be always grateful of being chosen to participate on this course. Not only that I learned many things but also of the fun I felt being involved on some of the activities. I'm proud to have known Chef Andrea in person and for those who are planning or want to enroll for a cooking class. I am highly recommending Alta Società! You will never regret of choosing it. Is it your dream to learn the techniques of the Italian cuisine? If so, your dream can become true in the kitchen of Alta Società. I have spent there five days with Chef Andrea Sposini. He is not only a very good cook, but also a connoisseur of ingredients and wine and a passionate teacher. He has learned me a lot, for example how to make fresh pasta by hand, mouth melting gnocchi di patate, risotto, several ways of preparing meat, poultry and fish and of course some irresistible dolci. All dishes were made with fresh seasonal produces. I was totally immersed in the Italian way of cooking and eating which fulfilled me with joy. I am Andrea Sposini very thankful for his cooking lessons, which I can recommend to every real lover of Italian food.

A chance meeting in Perugia with Stefano, the son of Janice (who helps with English translation in the lessons)found us one night at the cooking school a few weeks ago with just Andrea and us. So we had the Master all to ourselves! It was almost a spiritual experience with Andrea infusing us with his deep respect for his ingredients and love of Italian cooking. The Umbrian Rustic Cuisine course included a classic recipe for each course from antipasto to dessert. The whole meal was prepared and ready to enjoy within two and a half hours> Chef Andrea worked efficiently and explained his lesson with expert precision. I appreciate that his explanations were mult- dimensional. An answer to a question was followed by its history, variations by region, different styles and current methods. Participants went away with a plethora of information. For recommendations, I would suggest that recipes are either in Italian or in English and not a blend of the two. Also, we had trouble finding the school as the street sign is visible only from one direction and the school is not marked. The folks at the cafe didn't know where it was either. Overall the experience was excellent and my family would love to go back. Complimenti e grazie!
